I need to produce an AVI with the GBA - any emulator perhaps does it?

Or what ways are to do something like that?

GBA doesn't have a TV Out (yet?), so you're stuck with crappy emulators   . I don't know if any of them is capable of that, but that's very unlikely.
There are several tools which can capture movies from desktop (and with that from any emulator window) though, like Camtasia, HyperCam or HyperSnap... they can be found at any good Shareware site, like www.tucows.com or www.download.com .
